Serves 8 or 6 large servings.
Ingredients
- 6+ large peaches or enough for the bottom of the pan
- 1/2 c. sugar
- 2 Tbsp. fresh lemon juice
- 2 tsp. corn starch
Ingredients – Biscuit Topping
- 2 c. all-purpose flour
- 1 c. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 3/4 stick cold, unsalted butter, cut into small pieces
- 1/2 c. boiling water
Directions
Preheat oven to 425 degrees.
Blanch and peel peaches. Slice. Toss peaches with sugar, lemon juice and cornstarch. Place in
glass 13x9 baking dish and bake 10 minutes.
While peaches bake: stir together flour, sugar, baking powder and salt. Blend in butter with
fingertips or pastry blender to consistency of coarse meal. Stir in water until just combined.
Remove peaches from oven and drop spoonfuls of topping over them. Bake until topping is golden,
about 25 minutes.
Serve with whipped cream flavored with Amaretto.
