Parsnip and Carrot Latkes |

Ingredients
- 2 medium carrots, peeled and grated
- 5 small parsnips, peeled and grated
- 1/4 c. Matzo meal (or flour)
- 2 eggs, beaten
- 2 tsp. chive or scallion, minced
- 1 tsp. parsley, chopped
- 1/4 tsp. salt
- 1/t T. pepper
Directions
Toss grated carrots and parsnips with flour, add eggs, chives, parsley, salt and pepper. Mix until evenly moistened. Drop by teaspoon into hot oil and fry on both sides until golden brown.
