Leeks and Ground Beef PDF Print

Ingredients

  • 3 medium leeks (white and pale green part only) halved lengthwise
  • 1/4 lb. ground beef
  • 1 Tbsp. peanut oil
  • 1/2 tsp. salt
  • 1/3 tsp. black pepper
  • 1 medium tomato

Directions

Wash leeks in a bowl of cold water, then lift out and drain well. Slice leeks thin crosswise and set aside. Heat 12-inch heavy skillet over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add oil, swirling skillet to coat and add beef and stir-fry, breaking up lumps, until no longer pink, about 2 minutes. Add leeks and tomato and simmer, stirring occasionally, until just tender, 2 to 3 minutes.
