Cucumber Salad with Rice Vinegar Dressing PDF Print

Ingredients

  • 3 c. thinly sliced seeded, peeled cucumber (about 2 cups)
  • 3 Tbsp. rice vinegar
  • 1 tsp. sugar
  • 2 tsp. dark sesame oil
  • 1/2 tsp. salt
  • 2 Tbsp. chopped green onions
  • 1 1/2 Tbsp. chopped, unsalted, dry-roasted peanuts

Directions

Combine first 5 ingredients in a medium bowl. Toss to coat cucumber. Sprinkle with onions and peanuts before serving.
