Chicken with Turnips and Dried Cherries PDF Print

Ingredients

  • 2 T. butter
  • 4 boneless, skinless chicken breasts
  • 1/2 c. flour
  • Salt to taste
  • Pepper to taste
  • 2 turnips, peeled and diced
  • 1 small onion, peeled and diced
  • 2 tsp. maple syrup
  • 1/4 tsp. fresh thyme, minced
  • 3/4 c. chicken broth
  • 1/4 c. dried sweet cherries
  • 1 T. fresh parsley, chopped

Directions

Pound chicken until tender. Brown chicken in butter in a hot skillet until browned on both sides. Remove chicken and set aside. Cook turnips in the skillet until tender, reduce heat and add onions. Cook for 3 to 4 more minutes. Add maple syrup, thyme and chicken broth. Bring the mixture to a boil, add the chicken and sprinkle with cherries. When chicken is fully cooked, transfer to a serving platter and sprinkle with parsley.
