Chicken with Turnips and Dried Cherries |

Ingredients
- 2 T. butter
- 4 boneless, skinless chicken breasts
- 1/2 c. flour
- Salt to taste
- Pepper to taste
- 2 turnips, peeled and diced
- 1 small onion, peeled and diced
- 2 tsp. maple syrup
- 1/4 tsp. fresh thyme, minced
- 3/4 c. chicken broth
- 1/4 c. dried sweet cherries
- 1 T. fresh parsley, chopped
Directions
Pound chicken until tender. Brown chicken in butter in a hot skillet until browned on both sides. Remove chicken and set aside. Cook turnips in the skillet until tender, reduce heat and add onions. Cook for 3 to 4 more minutes. Add maple syrup, thyme and chicken broth. Bring the mixture to a boil, add the chicken and sprinkle with cherries. When chicken is fully cooked, transfer to a serving platter and sprinkle with parsley. |
