Ingredients

  • 2 1/4 c. cherries, pitted, about 3/4 lb.
  • 1 Tbsp. sugar
  • 1/2 small red onion, finely chopped
  • 1 large jalapeno pepper, finely chopped
  • 2 Tbsp. fresh lime juice
  • 1/4 c. fresh Cilantro
  • 1/2 tsp. salt

Directions

Coarsely chop the cherries. Stir together with sugar until sugar dissolves. Stir in the onion, jalapeno, lime juice, cilantro and salt. Let stand at room temperature 30 minutes allow flavors to develop.
